Asparagus season is tantalizingly close, so it’s time to dig out those asparagus recipes! Here are some of my favorite recipes with asparagus in them:
- Plain Old Asparagus: When I was young, this was the only way we ate asparagus. I looked forward to it every year. Simply boil in salted water until cooked (not overcooked though, you want a bit of toothsomeness left), drain, add a little butter and salt. Heaven!
- Sugared Asparagus: A surprisingly not-too-sweet side dish
- Asparagus Soup: Because sometimes it can still be a bit cool this time of year. Great on a rainy day.
- Roasted Asparagus (great with lamb)
- Sausage Asparagus Skillet: Kid-friendly as it also includes ground beef.
- Lemon Asparagus Pasta: Also includes chives, definitely a spring dish!
- Creamed Asparagus Omelet: Also works for spinach. Great brunch item.
- Asparagus Oven Pancake: A base recipe that you can make either savory (with vegetables like asparagus) or sweet, using fruit.
- Grilled Asparagus: A great addition to salmon, other vegetables, and lots of cheese in a foil packet.
- Asparagus with white sauce.

I LOVE asparagus. We pick it wild on my grandparent’s ranch. We always sneak some fresh sprigs as we’re picking them. Asparagus is delicious fresh and raw… but I love just plain steamed/boiled asparagus.

Hi Wendy! I have a funny little story to tell. When I used to live in another part of town I would walk my daughters in a stroller past some homes that were deep in the woods. At the front of one of the homes was an evergreen shrub boarder and ONE stray asparagus fern had seeded in the cracks of the shrub boarder and every year I would pick one of the two stems that came up and wash it when I got home and eat it raw. LOL I love asparagus any which way you can make it as it reminds me so much of spring and new growth! Thanks so much for sharing your wonderful recipes with us on the hearth and soul hop! hugs! alex

When i am short on time, I get a clean plastic bag, put in washed asparagus in, drizzle olive oil, salt, black pepper, and shake the bag, then spread it out on a baking sheet and put in the oven for 10 min. YUMMY , FAST, and EASY.
