In a large saucepan, saute' the onion in 1 T of oil, until golden, about 7-10 minutes.

Add the potato, water, and salt and cook over medium heat until soft, 10-15 minutes.

Add the peas and cook until bright green. Puree, taste and adjust seasoning, and serve warm. If desired, garnish with a dollop of yogurt, sour cream, and/or fresh chopped dill or parsley.
