Heat butter in a small saucepan, add flour, and cook over medium heat, stirring constantly, for 3 minutes. Remove from heat.

Add milk, salt, and nutmeg and return to heat; bring to a boil, stirring constantly until thickened. Add dry mustard and cheese and stir until cheese melts.

Yield: 1 cup
