Three Pea or Greens Stir Fry

Note: I am giving the greens version here. For the peas, use 1 1/2 C sugar snap peas, 1 1/2 C snow peas, 1 C peas, and add 1 T minced ginger root at the beginning with the garlic. At the end, instead of balsamic vinegar, stir in 1 tsp soy sauce and 1 tsp sesame oil.

Stir fry garlic in oil until fragrant.

Handful by handful stir in 12-16 loosely packed cups of bok choy, spinach, kale, Swiss chard, or other greens and stir to coat with oil and garlic. Stir in crushed chilies, cover and cook until just wilted and heated through, about 5 minutes. Add water if necessary.

Season with salt and pepper, and drizzle with balsamic vinegar immediately before serving.
