Apple Lentil Salad

lentils, rinsed

curry powder

apples (tart)

lemon juice

potatoes (cooked, cooled, peeled, and chopped)

onion (thinly sliced)

parsley, chopped

Soak lentils 15 minutes in hot water.

In large saucepan heat 1/4 C olive oil. Add salt and curry powder and heat until bubbly. Drain lentils, add to saucepan, and fry briefly.

Add water and cook until absorbed, about 20 minutes. You may need to add more water to cook lentils until they are tender. Drain any excess water and cool.

Combine apples and lemon juice to prevent browning, and mix with the cooled lentils.

Mix in potatoes, onion, parsley, and salt to taste. Serve warm or at room temperature.
