Parmesan cheese freshly grated

Combine water and yeast in a mixing bowl, stirring until dissolved.

Add remaining ingredients (except cheese) and mix well.

Add the cheese with enough additional flour to make a soft dough. Knead 8-10 minutes, until smooth and elastic. Place in greased bowl, turn to grease both sides, cover iwth a damp cloth, and let rise 1 hour. Shape into three loaves and place in greased 8x4 pans and let rise 30 minutes.

Bake in preheated oven at 350F until golden brown, 35 minutes.
