If you are looking for a way to sneak in leftover veggies, this is your recipe! Very tasty.
Adapted from Simply in Season, this isn’t a difficult recipe but adds some veggies that at least I wouldn’t have thought to put in there.
Start out by sauteeing 2 cloves of garlic, an onion, and a green pepper (all chopped of course) until softened.
Then add 2 C of corn, 1 small/med zucchini (sliced), and 1 1/2 T cumin. I had some leftover corn on the cob and grated zucchini so I threw that in. ?Saute that for awhile.
Then add 2C cooked black beans, 1 C chicken or vegetable broth, and 6 T salsa. You can also add a cup of chopped chicken – we added a can of chicken since we tend to keep those on hand.
The recipe says to cook that until there is no excess moisture, but we never got to that point. We figured it was close enough. Served on a whole wheat tortilla with extra salsa, sour cream, and cheese. Yum!
As you can see, this is a very ?basic recipe and you can use your imagination.
