Rhubarb Muffins #SundaySupper

I made these rhubarb muffins yesterday past weekend, from this recipe that I first posted a couple of years ago. It has turned out delicious every time I've made it!

When this week’s Sunday Supper theme was nostalgic summer recipes, I immediately thought of these rhubarb muffins that are one of my favorite ways to eat rhubarb. It doesn’t have quite as much sugar as the rhubarb sauce or pie that I had growing up, but it still brings back the memories!

Rhubarb Muffins

Ingredients

  • 1 1/2 cups flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup yogurt (I used kefir)
  • 3/4 cup brown sugar
  • 1/2 cup oil
  • 1 egg, beaten
  • 2 teaspoons vanilla
  • 1 1/2 cups rhubarb, diced
  • 1/4 cup sugar
  • 1 Tbs butter (melted)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon flour

Instructions

  1. 1. Combine flour through salt thoroughly.
  2. 2. In a separate bowl, combine yogurt through vanilla. Stir in dry ingredients just until moistened.
  3. 3. Stir in rhubarb. Fill greased muffin tins two-thirds full.
  4. 4. Combine sugar, butter, cinnamon, and flour together and sprinkle on top of muffins.
  5. 5. Bake at 375F in a preheated oven for 20 minutes or until toothpick inserted in center comes out clean. Cool on wire racks.

The Verdict: AWESOME! These were good the first time I made them, and have not failed me since. They are not overly sweet, and the rhubarb is such a nice flavor .

    Perfect! I just finished chopping up rhubarb for a pie, and was wondering what to do with the extra rhubarb…wonder no more!!!

    Yum. I have a very pretty rhubarb growing in the backyard as we speak. I call her ‘Barb. She’s a split off a 100+ year old original that was carried to the US from Finland by the lady I got it from’s grandmother. I’m kind of in love.

    Now, to figure out how to convert your recipe to gluten free flour and add strawberries …

    Yum! I bought some rhubarb on Sunday to make a Strawberry/Rhubarb Crisp (sorry, strawberries)

    Yum! I’m a HUGE fan of homemade rhubarb strawberry pie with fresh rhubarb straight out of the garden. I would love to try making rhubarb muffins. Thanks so much for the recipe!
