It’s day 2 of PumpkinWeek! Today I’m sharing a harvest stew that features–you guessed it–pumpkin!
This is loosely based on various stew recipes that I’ve found online. If you don’t have smoked brisket, you can omit it or use stew beef or venison. But it does add a nice flavor! DH loves to smoke meat, and we often have leftovers in the freezer. As with any soups or stews, feel free to experiment with other ingredients too! It’s nice to use up any leftover pureed pumpkin you might have, or other vegetables.
For an extra kick top with pepperjack or jabanero cheeese!

Harvest Stew

Ingredients

  • 1 onion chopped
  • 1 red bell pepper chopped
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • salt and pepper to taste
  • 1 can diced tomatoes with chilies
  • 2 cups diced pumpkin
  • 3/4 cup pureed pumpkin
  • 2 cups corn
  • 2 cups smoked brisket chopped
  • 2 cups white beans cooked

Instructions

  1. In a large pot, saute the onion, pepper, garlic, chili powder, salt and pepper until soft.

  2. Add remaining ingredients and simmer at least half an hour, until all ingredients are soft and flavors meld. May need to add up to 32 ounces of water to desired thickness.
