So here’s another attempt at parsnips with maple. The soup from the other day tasted good, but the texture just wasn’t right. I figured I had a better shot at this recipe from Simply in Season because who doesn’t love roasted parsnips?
2 cups parsnips, peeled and cut into large pieces
1 Tbs maple syrup
1/2 tsp butter, melted
2 Tbs walnuts, toasted
1. Slice parsnips into rounds and spread on a baking sheet in a single layer. Sprinkle with salt and bake in a preheated oven at 400F for about 30 minutes, or until parsnips are soft.
2. Combine maple syrup and butter and pour over the baked parsnips. Top with walnuts and serve.
Servings: 2
The verdict: Yum, more please! The maple really complements the sweetness of the roasted parsnips.

I’ve really only used parsnips when I have roasted veggies to put into my chicken stock. You get the flavor, but not the actual parsnip in the finished product. Typically I don’t like “sweet” food unless it is dessert, but I DO love squash with maple syrup so these parsnips might do just fine!
