This is another recipe from Simply in Season that I probably would have never made. Carrot bake? Um, OK. Plus it takes like an hour to bake AFTER simmering for 25 minutes. Not exactly weeknight fare. So I resigned myself to making it on a Sunday evening. Boy, was I pleasantly surprised! This would be a great Thanksgiving side dish or another special occasion side dish.

Ingredients
- 3 cups carrots, shredded
- 1 1/2 cup water
- 2/3 cup brown rice, uncooked
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 cup Monterey Jack cheese shredded
- 1 cup milk
- 2 eggs, beaten
- 1/4 cup onion, chopped
- 1 pinch nutmeg
- 1/2 cup Monterey Jack cheese shredded
Instructions
- Combine carrots, water, rice, salt, and pepper and bring to a boil. Reduce heat, cover, and simmer for 25 minutes. Do not drain.
- Stir in the cheese, milk, eggs, onion, and nutmeg and transfer to a 1 1/2 qt casserole dish. Bake uncovered at 350F for one hour.
- Sprinkle remaining cheese on top and return to oven to melt the cheese.
The verdict: You know how I can tell if DH LOVES something? He goes back for seconds. And thirds. Which he most definitely did with this dish. It smells sooo heavenly coming out of the oven. There’s something about the creamy texture accented with the rice that is most comforting. Carrots are truly transformed in this one dish wonder. If I have a Sunday dinner at my house I’m definitely serving this. DH added sour cream to his, to “kick it up a notch.” Me, I was doing my best to stay within calories for the day so it was all I could do to not eat the whole thing.
