This recipe from The Simple Art of Eating Well is a snap to throw together and very tasty to boot. If you're not a fan of cardamom, you can substitute cinnamon.

This week’s Sunday Supper theme is coffee, and I decided to share this recipe from The Simple Art of Eating Well.  It is a snap to throw together and very tasty to boot. If you’re not a fan of cardamom, you can substitute cinnamon. Perfect to accompany a cup of cofeee!

 

Cardamom-Crumb Coffee Cake

Ingredients

Oatmeal Crumb

  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 1/2 cup packed light brown sugar
  • 1 cup old fashioned rolled oats (divided)
  • 1/4 cup white whole-wheat flour or whole-wheat pastry flour (I used whole-wheat pastry flour)
  • 1/2 teaspoon ground cardamom
  • 1/4 cup chopped walnuts (optional; DH hates walnuts so I didn’t use)
  • 2 cups white whole-wheat flour or whole-wheat pastry flour (I used whole-wheat pastry flour)
  • 2 teaspoons baking powder
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup packed light brown sugar
  • 1 cup buttermilk (or 1 C milk + 1 Tbsp lemon juice)
  • 1/4 cup canola oil (I used olive oil)
  • 1 teaspoon vanilla extract

Cake

    Instructions

    1. To prepare oatmeal crumb: In a food processor, process butter, 1/2 C brown sugar, 1/2 C oats, 1/4 C flour, and 1/2 tsp cardamom until crumbly. Combine the remaining 1/2 C oats and walnuts with fingers.
    2. To prepare cake: Preheat oven to 350F. Sift together dry ingredients; whisk together wet ingredients in a separate bowl; combine gently.
    3. Spread half the batter in an 8×8 pan (don’t forget to use cooking spray!), sprinkle 1/2 the topping on it, layer remaining batter on top, then sprinkle the remaining topping on . . .top. Bake for 35-40 minutes until a toothpick comes out clean. Let cool for 10 minutes.

    The Verdict: The flavor is AWESOME! DH and his brew buddies enjoyed it, although DH thought it was a little dry (duh, it’s coffee cake). I’m thinking that bits of apple or dried figs would be a good addition.

      This looks wonderful! It reminds me of a cinnamon cake that I always used to make when we were eating sugar :(. I have been able to replicate a lot of recipes w/ “healthy” sugar alternatives, though so I just might have to give this a whirl! If I remember I’ll have to compare the recipes and let you know what the differences are b/c they seem so similar!

      I love how whole wheat pastry flour turns out in these recipes…hearty but very light.

      It might turn the coffee cake into a tea cake, but when I think of cardamom I immediately think of chai tea. Perhaps some chai tea powder in the crumb would be good?

      Oh yum, I love cardamom! I wish it weren’t so expensive, so more people could stock it in their spice cupboard. 😉 So heavenly!!

      My mom’s chuck roast recipe uses cardamom! You should check it out if you love cardamom (although it uses a bit, I wouldn’t say I can pick out that flavor when it’s done… but it does have an amazing flavor!). 🙂
