For the first post of the week I decided to share a recipe that is definitely in the “indulgence” category. As a health coach I wouldn’t recommend eating this every day, but for a special occasion it’s perfectly acceptable. It would be a great idea to bring to a potluck brunch or to serve to guests so you’re not tempted by the leftovers.
I have made apple oven pancakes before, but for this one I decided to kick it up a notch. I knew I wanted to incorporate some of the bulk sausage we’ve been trying to use up, plus I had a pile of cheese from our sponsor Cabot Cheese. With a few tweaks, this recipe from Betty Crocker served as a great basis to showcase both Cabot Cheese and the Ranier apples.

Cook Time: 35 min
Total Time: 50 min
- 1 medium apple thinly sliced
- 1?2 cup packed brown sugar
- 1?3 cup butter or margarine
- 1?2 cup maple-flavored syrup
- 1 lb bulk pork sausage
- 1?2 cup cheddar cheese shredded
- 1 cup Original Bisquick™ mix
- 1?4 cup packed brown sugar
- 1?2 cup milk
- 1 egg
- Additional maple-flavored syrup if desired
- Heat oven to 350°F. Spread apple slices evenly over bottom of ungreased 13×9-inch pan. In 1-quart saucepan, heat 1/2 cup brown sugar, the butter and syrup over low heat, stirring occasionally, until melted. Pour syrup mixture over apples.
- In 10-inch skillet, cook sausage over medium heat, stirring occasionally, until no longer pink; drain. Sprinkle sausage evenly over apple-syrup mixture. Then sprinkle with cheese.
- In small bowl, stir remaining ingredients except additional syrup until blended. Carefully pour over sausage.
- Bake 30 to 35 minutes or until top springs back when touched in center. Cut into 3-inch squares; turn each square upside down onto plate. Serve immediately with additional syrup.
The Verdict: Oh my, this was so sweet! It played nicely with the savory sausage and cheese. DH gobbled it right up. We did not need extra syrup at all.
